Shrimp Fried Rice

INGREDIENTS:

1 Cup Uncooked White Rice
1 2/3 Cup Water, With 1/4 Cup Removed
4 Tablespoons Peanut Oil
1/2 Cup Fresh Bean Sprouts
1/2 Cup Onions, Chopped
1/2 Pound Raw Shrimp, Peeled And Deveined Without Tail
1/4 Cup Green Onions, Chopped
2 Eggs, Beaten
1 Teaspoon Salt
1/4 Teaspoon Black Pepper
4 Tablespoons Soy Sauce
1/4 Teaspoon Sesame Oil

DIRECTIONS:

Put rice and water in rice cooker. Cook according to rice cooker instructions. Refrigerate rice until well chilled.

Heat wok for 2 minutes. Add peanut oil, bean sprouts and onions. Mix well and cook for 3 minutes.

Mix in chilled rice and shrimp and cook for another 3 minutes. Stirring constantly.

Mix in green onions, eggs, salt, pepper, soy sauce and sesame oil. Cook for another 4 minutes, stirring continuously, until eggs are cooked and everything is blended evenly.

*Can add chopped green and/or red pepper for color.
